How to make a Chipotle Quinoa Salad without cheese

A Chipotle quinoa salad recipe is easy and inexpensive, but you’re going to want to use some cheese to top it up with some chips.
This recipe is so easy and cheap, it’s a must try!
Quinoa salad ingredients: 2 medium quinoa, cut into cubes 1 tablespoon olive oil 1 medium onion, chopped 1 tablespoon minced garlic 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/8 teaspoon freshly cracked pepper 3 tablespoons of extra virgin olive oil 2 tablespoons of cheddar cheese (or shredded mozzarella cheese) 1/3 cup of cooked rice, thawed 1/7 cup of shredded cheddar Cheese sauce (recipe coming soon) Directions: Preheat oven to 425°F.
Chop up the onion and garlic.
Chop the cheddar in a food processor and pulse until smooth.
Cut up the olive oil and cook the onion until it becomes translucent.
Add the minced garlic and salt to the processor.
Pulse until smooth and add the olive and olive oil mixture to the onion mixture.
Cook until the mixture becomes a nice creamy brown color.
Add in the cilantro and cook until the cotija cheese starts to brown.
Add another tablespoon of olive oil to the mixture and cook for another minute.
Add a couple tablespoons of the cheese sauce and cook, stirring occasionally, until the cheese is melted.
Add more cheese sauce to taste.
Set the mixture aside.
In a small bowl, whisk together the rice, quinoa and cheddar until combined.
Transfer the quinoa mixture to a baking dish.
Sprinkle with the remaining 1 tablespoon of cheese sauce.
Top with some cheese and serve immediately.
Recipe Notes *This recipe will also yield a tasty quinoa meal, but it will be much more tender and crunchy.
